🍰 Frozen S'mores Without a Campfire

I'm always looking for new, easy recipes to prep for our next trip. I plan out the days and prep accordingly (often allowing for a few days where we might stop along the way to sample some local fare). Right before our last recent trip, to Shenandoah National Park, I happened upon a recipe for Frozen S'mores that sounded simple and tasty! 

INGREDIENTS:

Graham Crackers

Chocolate Pudding Mix

Marshmallow Fluff

Cream Cheese

Heavy Whipping Cream (the original recipe called for Cool Whip, but I prefer making my own - definitely up to you)

DIRECTIONS:

Line a 9" x 13" pan with parchment paper (leaving sides coming up for easy grab and pull). 

Make pudding mix according to directions. Pour pudding into lined pan and cool while make "fluff" layer.

Beat stiff peaks of cold whipping cream (set aside). Beat together fluff and cream cheese until smooth. Fold in whipped cream (or cool whip). 

Smooth fluff layer over pudding layer and freeze for at least 4 hours. 

Pull frozen layers out of pan and lay graham crackers over top of fluff layer. Slice accordingly (I went with 2 squares per serving). 

Flip over sliced servings and sandwich with other half of graham cracker. 

I wrapped them individually for easy grab and go!

WARNING:

The fluff layer is highly addictive! If you lick the spatula, you'll be hooked.
