I make these before every road trip. I make extras to keep at home too, for
snacking. It's a goodness-packed snack I don't feel guilty about eating and
giving them to my family. I know all the ingredients that go into it,
nothing has a 14 letter name I can't pronounce, no additives or artificial
anything goes into these.
Listen . . . I measure with my heart. This is just a template / guide for
you to follow and make your own.
One bowl. Toss ingredients together. Mix. Roll into balls. Done. ✔
INGREDIENTS
ROLLED OATS
GROUND FLAX SEED MEAL (I use golden flax seed meal)
CHIA SEEDS
PEANUT BUTTER POWDER
ALMOND BUTTER
COCONUT OIL (I use cold-pressed, organic, unrefined)
MAPLE SYRUP (use the real stuff)
DARK CHOCOLATE CHIPS
DRIED CRANBERRIES OR BLUEBERRIES
CINNAMON
SALT
INSTRUCTIONS
In a saucepan, melt one 16oz jar of almond butter + 5 tablespoons of coconut
oil + 1 or two tablespoons of maple syrup. Don't cook this mixture, just
melt everything together until smooth. Set aside.
In a big bowl, mix all other ingredients together. I start with about 4 cups
of the oats and eyeball everything else from there. Make sure to watch the
video of making the balls to get an idea.
The beauty of this recipe is you can add anything you like - dark chocolate,
milk chocolate, white chocolate chips | dried cranberries, blueberries,
raisins, dates, apricots, whatever | mix in pumpkin seeds, sunflower seeds,
sesame seeds . . . get creative!
I like to mix all the dry ingredients together first and then pour in about
half of the almond butter mixture. Start to mix everything together and add
more of the almond butter mixture as needed. You want everything to come
together so you can roll into balls.
I use a small cookie scoop so all the balls are the same size. Scoop, roll,
place on parchment lined sheet. Once done rolling all of the mixture, place
the sheet into the refrigerator for about an hour. This is to help the coconut
oil firm up and hold the balls' shape.
The way I travel with the bawls is: place 4 balls (2 for Kevin / 2 for
me) into small snack-sized zip bag and then place all the small bags into one
large storage bag. That way when we're rolling down the road or going on a
hike, we just grab a small bag and snack! I also like to keep them in the
fridge to store.
